Savatiano

Savatiano

Greece · White · Available (A)

The most planted variety in Greece, centred on Attica. Extremely drought-tolerant. Its reputation was destroyed by industrial retsina, but old-vine, low-yield, unresined Savatiano is genuinely good — nutty, herbal, with soft acidity and a saline finish, and it ages surprisingly well. A small group of Attica producers have rehabilitated it.
